With 25 minutes to kick off (Sunday February 2)..Go Broncos

Tomorrow at 4:30 kick off will begin for Super Bowl XLVIII. Payton Manning and Russell Wilson will be face to face in New Jersey at the MetLife stadium (freezing there tush off). Unlike Super Bowl I, where The Green Bay Packer’s quarterback Bart Starr and The Kanas City  Chiefs quarter back Len Dawnson were face to face at Los Angeles Memorial Coliseum with the temperature in Los Angles a balmy 79 degrees. For the past two weeks the news casters (on most channels) have talked about the freezing temperatures for tomorrow’s game and how the cold will affect each team. The wait is almost over!

The fans of Denver have been chanting Omaha and sporting the Bronco colours all week long.  We will be hosting a Super Bowl party at our house (if you don’t already know I am from Denver, Colorado). I confess Omaha has been uttered out of my mouth and I would love to see the Bronco’s take home the trophy. We will be watching the game at our home with about 15 friends. I thought I would share with you a fabulous and fast recipe for game day. In fact my spicy nuts will take 25 minutes from start to finish. If you find yourself 25 minutes to kick off needing one more snack on your buffet table this is the recipe for you!

Spicy Nuts:

Remember to have plenty of beverages on hand; the nuts are spicy!

  •  1-large egg white
  • 50 grams/1/4- cup brown sugar
  • 100 grams1/2-cup sugar
  • 1/34-teaspoon fleur de sel
  • 1 1/2 teaspoon cinnamon
  • 1/4-teaspoon cayenne pepper
  • 1/4-teaspoon chili powder
  • 200 grams/ 2-cups nuts, almonds, cashews, hazelnuts, and pecans

Prepare your mise en place and preheat the oven to 150 degrees C/ 300 degrees F.

Spicy nuts mise en place

 Whisk the egg white to soft foam. Next whisk in the sugars and all the spices, then toss the nuts into the egg white mixture, evenly tossing them in the mixture.

Once the nuts are evenly coated with the egg white mixture, spread the nuts evenly in a single layer on a jellyroll pan.

Bake for 15 minutes toss the nuts once or twice, reduce the oven temperature to 120 degrees C/ 250 F. for about 10 to 15 minutes or until the nuts are dry and medium brown.

Remove from the oven and place on a jellyroll pan on a wire rack, stir the nuts again, cool, and serve. (The nuts will cool quite fast in a large mouth bowl.)
