DF has had dinner work nights all week, he designed a web program and app. He was the cover story for Investment Advisor, 10/2011 issue; though Sydney and I are bursting with pride we have not had many family dinners (between traveling and dinner engagements).
When sydney was young and we were on our own for dinner I would take her out to have “ice cream for dinner.” Now that she is in college those evenings happen less frequently. She surprised me tonight, and came home to have dinner with me. Since neither of us wanted to leave the house we decided on Avocado Potatoes. Avocados are one of the healthiest fruits, filled with potassium, vitamin c, and magnesium. Avocados helps to lower blood cholesterol,Β plump our skin cells, and allow for Vitamin A and E to absorb, both key ingredients in beautiful skin, hair and nails.
Baked Potato California Style:
2- red potatoes
1 avocado, mashed
Chives, amount optional, chopped
Scallions, amout optional, chopped
Grey sea salt, sprinkled
Lime zest
2 wedges lemon
Wash and scrub the potatoes.
Dry them really well, spray with Pam grilling spray, and sprinkle with grey sea salt.
Wrap each potato in tin foil tightly.
Β Unlike most recipes the oven is not preheated, place the potato in the cold oven and set the temperature to 204 degrees C/ 400 degrees F for 45 minutes.
Prepare the avocado and sides, in the meantime.
Cut the Avocado lengthwise.
Gently twist the cut avocado.
Scoop the meat out from the skin with a Tablespoon.
Zest one lime.
Squeeze fresh lime juice for taste and to keep the avocado brightly green.
Dice the scallions and chives.
I realize a baked potato is pretty simple to prepare, but it is a special dinner Sydney and like to have when DF is unavailable to join us for a family dinner; I wanted to share our ritual with you.
Served with a wedge of lemon adds an amazing flavor.
